The more I try fermented/cultured foods, the more I like them! I like the flavors and that they are good for my family and me. I like that, while they are a little time consuming, they are not complicated.
The more I read about them, the more I realize that I have much left to learn. If you don't feel fully versed in cultured foods, don't let that stop you from trying them. In my opinion, it takes a lot of neglect to "mess them up". If you don't like the first thing you try, then try something else. I bet there's something fermented that you will like.
Most of all, don't take my words on fermented/cultured foods as expert advice. Methods are updated all the time and opinions about what works and/or what is best differ from one person to the next.
